- 1/2 c. vegetable shortening
- 2 sticks butter or margarine
- 3 c. sugar
- 5 large eggs
- 2 tsp. lemon flavoring
- 2 tsp. vanilla flavoring
- 3 c. cake flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 c. milk
- 1 c. shredded coconut (optional)
Directions

1Cream together shortening and butter until creamy; add sugar and beat until light and fluffy.

2Add eggs, one at a time, beating well each time.

3Stir in lemon and vanilla flavorings.

4Sift together flour and baking powder; add alternately with milk, beginning and ending with flour and beating smooth after each addition.

5If desired, stir in coconut.

6Pour in greased and floured 10-inch tube pan and place in cold oven.

7Bake at 350° for 1 hour and 15 minutes or at 325° for 1 hour and 45 minutes.
