Cold Rice Salad

Ingredients

  • 1 pkg. fried Rice-A-Roni
  • 1 jar marinated artichoke hearts
  • 1 small can chopped ripe olives
  • 1 can sliced water chestnuts, drained
  • 1 diced bell pepper
  • 1/2 c. diced celery
  • 1/4 c. diced onions
  • 2 to 3 Tbsp. mayonnaise

Directions

    Prepare rice by package directions and let cool.

    Add remaining ingredients, cutting up artichoke hearts and adding oil from the jar.

    Add mayonnaise, salt and pepper to taste. Refrigerate at least 2 hours.

    Better if served the next day.
