- 1 pkg. fried Rice-A-Roni
- 1 jar marinated artichoke hearts
- 1 small can chopped ripe olives
- 1 can sliced water chestnuts, drained
- 1 diced bell pepper
- 1/2 c. diced celery
- 1/4 c. diced onions
- 2 to 3 Tbsp. mayonnaise
Directions

1Prepare rice by package directions and let cool.

2Add remaining ingredients, cutting up artichoke hearts and adding oil from the jar.

3Add mayonnaise, salt and pepper to taste. Refrigerate at least 2 hours.

4Better if served the next day.
