  • 2 c. cooked long grain rice
  • 1/4 c. chopped green onion
  • 1 small green or red pepper, diced
  • 1/3 c. celery, diced
  • 1/4 c. ripe olives, drained and sliced
  • 1/4 c. vegetable oil
  • 1 1/2 tsp. wine vinegar
  • 1/2 tsp. Dijon mustard
  • salt and pepper to taste

Directions

    Combine in a bowl, rice, green onion, pepper, celery and olives.

    In another bowl, beat the oil, wine vinegar and Dijon mustard.

    Toss well, seasoning to taste.
