- 2 c. cooked long grain rice
- 1/4 c. chopped green onion
- 1 small green or red pepper, diced
- 1/3 c. celery, diced
- 1/4 c. ripe olives, drained and sliced
- 1/4 c. vegetable oil
- 1 1/2 tsp. wine vinegar
- 1/2 tsp. Dijon mustard
- salt and pepper to taste
Directions

1Combine in a bowl, rice, green onion, pepper, celery and olives.

2In another bowl, beat the oil, wine vinegar and Dijon mustard.

3Toss well, seasoning to taste.
