Cold Rice Salad

Ingredients

  • 1 c. raw rice
  • 2 c. chicken broth
  • 2 Tbsp. salad oil
  • 4 Tbsp. wine vinegar
  • 1/2 tsp. horseradish mustard
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. dried dill weed
  • 1/4 tsp. dried basil
  • 2 Tbsp. chopped green onion or chives
  • 1 c. diced carrots
  • 2 medium tomatoes, diced
  • 10 oz. cooked ham, cut into strips

Directions

    Cook rice in broth until tender.

    Mix oil, vinegar, mustard, salt, pepper, dill and basil.

    Toss with hot rice.

    Refrigerate, covered, 1 hour or more.

    Before serving, mix remaining ingredients and toss.
