- 2 pounds fresh spinach, stems removed, washed and drained
- 1 tablespoon sesame oil
- 3 tablespoons rice wine vinegar
- 3 tablespoons soy sauce
- 1 teaspoon hot chili paste
- 1 teaspoon minced fresh ginger
- Pinch of sugar
- 2 tablespoons sesame seeds toasted
Directions

1Prepare an icewater bath.

2Bring 3 quarts of salted water to a boil.

3Add the spinach and blanch quickly, 15 to 20 seconds.

4Drain and plunge into the icewater bath.

5Drain the spinach well and chop coarsely.

6Place in a medium serving bowl.

7Whisk together the sesame oil, vinegar, soy sauce, chili paste, ginger and sugar.

8Pour the mixture over the spinach and mix to combine.

9Season with salt and pepper to taste and sprinkle with the toasted sesame seeds.

10Serve at room temperature or cold.
