  • 1/4 tsp. salt (optional)
  • 1/2 tsp. dry mustard
  • 1/4 c. sugar
  • 2 Tbsp. lemon juice
  • 1 Tbsp. vinegar
  • 1/4 c. low-fat or nonfat plain yogurt
  • 3 c. coarsely chopped cabbage
  • 1 tsp. dried tarragon leaves or use tarragon vinegar
  • chopped green pepper and/or pimento, celery and onion to taste

Directions

    Blend salt, mustard, sugar, lemon juice and vinegar with yogurt.

    Combine vegetables and tarragon leaves. Stir in dressing. Chill.
