Collard Green Frittata

- 1 Tbs. olive oil
- 1 medium yellow onion, chopped (1 1/2 cups)
- 1 10-oz. bag frozen collard greens, thawed and drained
- 10 large eggs, beaten
- 13 cup grated Parmesan cheese
Directions

1Preheat oven to 400F.

2Heat oil in ovenproof 10- to 12-inch skillet over medium-high heat.

3Add onion, and saute 5 minutes, or until translucent.

4Push onion to one side of pan, and add collard greens.

5Cook 5 minutes, then stir together greens and onions.

6Stir eggs into collard mixture.

7Cook 5 to 7 minutes, or until edges are set.

8Sprinkle with Parmesan cheese.

9Transfer skillet to oven, and bake 10 minutes, or until egg mixture is completely set.

10Cut into 6 wedges.
