  • 10 to 12 pieces fatback

    Cut up collards; wash with cold water several times.

    Then place in 5-quart pot and cook on high for a few minutes.

    Then turn heat down to medium-high.

    Fry fatback in skillet.

    Use fatback drippings to season collards.

    Stir often to make sure collards don't stick.
