- 3 to 4 bunches collard greens
- 2 c. water
- 1 ham hock or salt pork (small piece)
- 1 Tbsp. sugar
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1Wash and remove stems from greens.

2Boil ham hock or salt pork for 1 hour in water.

3Tear leaves into bite sized pieces.

4Add greens, sugar, salt and pepper.

5Cover and cook greens slowly until tender.

6Simmer for 2 hours.

7Serves 4.
