Ingredients

  • 3 strips bacon, diced
  • 1 medium onion, cut up
  • 1 clove garlic, minced
  • 1 tomato, chopped
  • 1 lb. zucchini, cut in 1/2-inch squares
  • 1 1/2 c. corn Niblets
  • 1 c. cooked green beans, cut in pieces
  • 1 tsp. vinegar
  • 1/2 tsp. sugar
  • 1 1/2 tsp. salt

Directions

    Saute bacon, onion and garlic.

    Add remaining ingredients and simmer over low heat for approximately 1 hour.

    (I suggest that corn not be added until mixture is almost ready to serve as it becomes tough, if cooked the entire time.

    Also, garlic salt may be substituted for the garlic clove and salt.)
