- 3 lb. fryer parts
- 2 pkg. Italian salad dressing mix
- 3 Tbsp. flour
- 2 tsp. salt
- 1/4 c. lemon juice
- 2 Tbsp. butter, softened
- 1 1/2 pt. salad oil
- 1 1/2 c. pancake mix, combined with 1 tsp. paprika
- 1/2 tsp. sage
- 1/4 tsp. pepper
- 1 c. milk
Directions

1Make paste of first 5 ingredients.

2Brush to coat chicken. Evenly stack pieces in bowl.

3Cover and refrigerate several hours. One and one-half hours before serving, heat 2-inches of oil in a 9-inch pot to 425°.

4Dip pieces in milk, then in pancake mix; coat well.

5Dust off excess.

6Lightly brown about 4 minutes each side. Place in shallow pans.

7Bake 35 minutes at 350°.
