  • 1 green bell pepper
  • 1 red bell pepper or small jar pimentos
  • 1 Spanish onion
  • 1 clove garlic
  • 1 1/2 c. chicken broth
  • 2 Tbsp. lard or butter
  • 1 tsp. cumin
  • 1 1/2 c. long grain rice
  • 1 1/2 tsp. salt

Directions

    Dice peppers, chop onion, mince garlic and heat broth.

    In saucepan cook peppers and onion in fat (lard or butter) over medium heat 3 to 4 minutes.

    Add garlic, cumin, rice and salt and stir until coated with fat.

    Add hot chicken broth.

    Cover and cook over low heat about 15 minutes.

    Turn off heat.

    Let stand covered 10 minutes.

    Fluff and serve.
