- 1 green bell pepper
- 1 red bell pepper or small jar pimentos
- 1 Spanish onion
- 1 clove garlic
- 1 1/2 c. chicken broth
- 2 Tbsp. lard or butter
- 1 tsp. cumin
- 1 1/2 c. long grain rice
- 1 1/2 tsp. salt
Directions

1Dice peppers, chop onion, mince garlic and heat broth.

2In saucepan cook peppers and onion in fat (lard or butter) over medium heat 3 to 4 minutes.

3Add garlic, cumin, rice and salt and stir until coated with fat.

4Add hot chicken broth.

5Cover and cook over low heat about 15 minutes.

6Turn off heat.

7Let stand covered 10 minutes.

8Fluff and serve.
