Conch Chowder

Ingredients

  • 1/2 pkg. thin sliced pepperoni
  • 1 lb. conch
  • 1/4 lb. popcorn shrimp
  • 5 medium potatoes, cubed 1/2 c. okra, sliced
  • 5 cloves garlic
  • 3 medium onions
  • 2 medium bell peppers, chopped
  • 2 (16 oz.) cans tomatoes, chopped
  • 1 large can tomato paste
  • 1 tsp. oregano
  • 1 tsp. basil
  • 2 Tbsp. fresh parsley, chopped
  • salt and pepper to taste
  • 2 to 2 1/2 qt. water

Directions

    In small amount of olive oil, saute garlic until soft but not brown; remove.

    Combine pepperoni, onions, peppers, tomatoes, tomato paste, oregano, basil, parsley, salt and pepper and water. Simmer 1 hour.

    Use food processor to break up tissue and chop conch into small pieces.

    Add conch, shrimp, potatoes, okra and cook another hour, or until done.

    Do not overcook.
