  • 1 qt. conchs, prepared and cut into small pieces
  • 3 slices fat pork
  • 1 Tbsp. cooking oil
  • 2 Tbsp. salt
  • 1 tsp. pepper
  • 8 white potatoes, quartered
  • 1 Tbsp. vinegar (optional)

Directions

    Fry out fat pork in a large pot.

    Add water, cooking oil, salt, pepper and conchs.

    Cook about 1 1/2 hours.

    Add potatoes and cornmeal dumplings; cook 1 hour more.

    If not tender, during last hour of cooking, add 1 tablespoon vinegar.

    Yield: 6 servings.
