- 1/2 c. lemon juice
- 2 medium artichokes
- 1 medium chopped finely onion
- 1 clove garlic, minced
- salt and pepper
- 4 tsp. olive oil
- 2/3 c. white wine and 2 c. water
- 1/4 c. parsley, chopped
Directions

1Place lemon juice in a large bowl and fill 3/4 with water. Clean artichokes.

2Trim stems and bottom.

3Cut about 1 1/2-inches off top.

4Place in lemon water.

5Reserve.

6Partially cover each pot and cook over medium low heat for 1 hour (artichokes should be tender and pull apart easily).

7Carefully place artichokes on a shallow platter.

8Spoon liquids on top.

9Sprinkle with parsley. Enjoy warm or cool.
