  • 1 (10 oz.) cream of onion soup
  • 1 c. shredded Cheddar cheese
  • 1/2 c. mayonnaise
  • 1/4 c. milk
  • 3 Tbsp. margarine
  • 1/2 c. bread crumbs
  • 1 (10 oz.) frozen cauliflower, cooked
  • 1 (9 oz.) frozen peas and carrots
  • 1/4 c. chopped pimento
  • 1 (3 oz.) sliced mushrooms
  • 1/4 c. Parmesan cheese

Directions

    Preheat oven to 375°.

    In a large bowl combine soup, cheese, mayonnaise and milk; mix well.

    Fold in cauliflower, peas and carrots, pimento and mushrooms.

    Turn into 1 1/2-quart baking dish.

    In a small saucepan melt margarine; stir in bread crumbs and Parmesan cheese.

    Sprinkle over casserole.

    Bake uncovered 35 to 45 minutes.
