- 8 large bell peppers
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons lemon juice
Directions

1Preheat the broiler.

2Set peppers on a baking sheet.

3Broil as close to the heat as possible, turning, until skins blister evenly, 6-8 minutes.

4Transfer peppers to a bag and seal.

5Let steam for 10 minutes.

6When cool enough to handle, peel and seed peppers under running water.

7Set in a colander to drain.

8Finely dice peppers and place in a serving bowl.

9Mix with olive oil, garlic, cumin, salt, pepper and lemon juice.

10Serve chilled.
