  • 3 slices bacon, cut into 1-inch pieces
  • 1 small onion, chopped
  • 1 small red bell pepper, seeded and chopped
  • 2 (12-ounce) cans hominy, drained
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

    Cook the bacon in a medium saucepan over medium heat, stirring often, until crisp and browned, about 5 minutes.

    Using a slotted spoon, transfer the bacon to paper towels to drain, leaving the fat in the pan.
