- sprig of thyme
- pinch of chili flakes
- Peppercorns
- Olive oil
Directions

1Separate the garlic cloves and peel them.

2Put them in an ovenproof ramekin along with the thyme, a pinch of chili flakes and a couple of peppercorns.

3Cover with olive oil.

4Wrap in aluminium foil and roast in the oven at 160C (320 Fahrenheit) for 45 minutes to an hour until soft and golden.
