1Clean, wash and cut meat in serving size pieces.

2Place meat in heavy saucepan, covering with cold water and 1/2 teaspoon salt. Soak for 30 minutes.

3After soaking, place saucepan and its contents on medium-high heat and boil for 30 minutes.

4After boiling, drain liquid from meat.

5Return to burner and cover the meat with water again, adding 1 to 2 bay leaves and 2 tablespoons of lard or a small piece of salt pork.

6Cook until tender.

7Remove meat from cooker and place in baking dish.

8Sprinkle with salt and black pepper and bake at 400° until brown.
