- 1/4 c. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 lb. chicken pieces
- 1/2 lb. fresh mushrooms
- 2 small onions, chopped
- 2 carrots, chopped
- 1/2 tsp. thyme
- parsley
Directions

1Mix flour, salt and pepper in plastic or paper bag.

2Shake chicken in bag, 2 or 3 pieces at a time, until coated.

3Brown chicken in oil.

4Remove to a warm platter.

5Cook and stir mushrooms and onion until onion is tender.

6Place chicken in a Dutch oven.

7Add remaining ingredients, except parsley.

8Heat to boiling.

9Reduce heat, cover and simmer until thick and chicken is tender, about 30 minutes.

10Sprinkle parsley over.
