Ingredients

  • 1/4 c. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 lb. chicken pieces
  • 1/2 lb. fresh mushrooms
  • 2 small onions, chopped
  • 2 carrots, chopped
  • 1/2 tsp. thyme
  • parsley

Directions

    Mix flour, salt and pepper in plastic or paper bag.

    Shake chicken in bag, 2 or 3 pieces at a time, until coated.

    Brown chicken in oil.

    Remove to a warm platter.

    Cook and stir mushrooms and onion until onion is tender.

    Place chicken in a Dutch oven.

    Add remaining ingredients, except parsley.

    Heat to boiling.

    Reduce heat, cover and simmer until thick and chicken is tender, about 30 minutes.

    Sprinkle parsley over.
