  • 1 bunch coriander
  • 2 cloves garlic
  • 2 tbsp. pumpkin leaves
  • 2 tbsp. fresh lime juice
  • 2 tsp. salt
  • 1 tsp. freshly ground pepper
  • 5 tbsp. olive oil

Directions

    In a food processor, combine the corriander, garlic, pumpkin seeds, lime juice, salt and pepper.

    With the motor running slowly add the olive oil until the sauce is emulsified.

    May be prepared two days ahead.

    Bring to room temperature 1 hour before serving.
