  • 2 cups mashed kumara
  • 2 cups canned corn kernels, drained
  • 1 egg, lightly beaten
  • 2 tablespoons parsley, chopped
  • 2 tablespoons chives, chopped
  • flour, for dusting
  • 2 tablespoons olive oil
  • tomatoes, sauce to serve

    Place first 5 ingredients in a bowl.

    Mix to combine.

    Season to taste.

    Form 1/4 cup measures into flat patties.

    lightly dust with flour.

    Place on lined tray.

    Chill 10 minutes.

    Heat oil in non stick fry pan.

    Cook patties for 3 minutes each side till golden.

    Serve with sauce or chutney hot, cold or at room temperature.
