- 2 cups mashed kumara
- 2 cups canned corn kernels, drained
- 1 egg, lightly beaten
- 2 tablespoons parsley, chopped
- 2 tablespoons chives, chopped
- flour, for dusting
- 2 tablespoons olive oil
- tomatoes, sauce to serve
Directions

1Place first 5 ingredients in a bowl.

2Mix to combine.

3Season to taste.

4Form 1/4 cup measures into flat patties.

6Place on lined tray.

8Heat oil in non stick fry pan.
