- 3 green, red or yellow bell peppers, cut into 1/2-inch strips, diced
- 1/2 c. chopped onion
- 2 c. fresh or unthawed frozen corn kernels
- 1/2 tsp. ground cumin
- salt and pepper to taste
Directions

1Place peppers and onion in microwave-safe 2-quart casserole dish.

2Stir to combine and cover tightly with plastic wrap, venting edge.

3Microwave on High 6 to 8 minutes or until peppers and onion are tender.

4Mix in corn and cumin.

5Re-cover and microwave on High 4 to 6 minutes more until heated through. Drain.

6Season with salt and pepper, and serve.
