- 1 each red and green pepper
- 1 Tbsp. each olive oil and butter
- 1 1/2 c. frozen corn kernels
- 1/3 c. finely chopped green onions
- 1/4 tsp. finely minced garlic
- 1/4 tsp. ground cumin (optional)
- salt and pepper
Directions

1Cut the peppers into thin strips.

2There should be about 2 cups.

3In a large skillet, heat the olive oil and butter over medium heat.

4Add the peppers, corn and onions.

5Sprinkle with the garlic, cumin, if used, salt and pepper.

6Cook, shaking skillet occasionally, 6 to 8 minutes or until heated through and pepper strips are tender-crisp.
