- 1 lb. (3 or 4 medium) zucchini
- 1 Tbsp. butter
- 1/2 c. chopped onion
- 2 eggs, beaten
- 1 can corn, drained
- Swiss cheese
- 1/4 c. bread crumbs
- 1 Tbsp. butter, melted
- 2 Tbsp. grated Parmesan cheese
Directions

1Slice zucchini; cook, covered, in small amount of salt water until tender.

2Drain and mash with fork.

3Cook onion in butter. Combine eggs, zucchini, onion, corn, cheese, and salt.

4Pour into casserole.

5Mix butter, bread crumbs, and cheese (Parmesan). Sprinkle on top.

6Place on baking sheet and bake at 300° until brown and bubbly.

7Garnish with cherry tomatoes and parsley.
