  • 1 small onion, grated
  • 1/2 green pepper, diced
  • 1 stick margarine
  • 3 beaten eggs
  • 1 can whole kernel corn, undrained
  • 1 can cream-style corn
  • 1 small jar diced pimento
  • 1 pkg. Jiffy corn muffin mix
  • 1/2 pt. sour cream

Directions

    Saute the onion and green pepper in the margarine (not until brown, just clear).

    Add the eggs.

    Add the kernel corn, cream-style corn and pimento. Add the corn muffin mix.

    Blend the sour cream through mixture. Bake at 350° for 1 hour.

    Use toothpick test for doneness.

    Continue baking until toothpick tests clean.
