- 1 small onion, grated
- 1/2 green pepper, diced
- 1 stick margarine
- 3 beaten eggs
- 1 can whole kernel corn, undrained
- 1 can cream-style corn
- 1 small jar diced pimento
- 1 pkg. Jiffy corn muffin mix
- 1/2 pt. sour cream
Directions

1Saute the onion and green pepper in the margarine (not until brown, just clear).

2Add the eggs.

3Add the kernel corn, cream-style corn and pimento. Add the corn muffin mix.

4Blend the sour cream through mixture. Bake at 350° for 1 hour.

5Use toothpick test for doneness.

6Continue baking until toothpick tests clean.
