- 2 c. cornmeal
- 1/2 c. hot water
- 2 c. flour
- 4 tsp. baking powder
- 1 tsp. salt
- 3 eggs
- 2 c. milk
- 2 Tbsp. butter, melted
Directions

1Pour boiling water over cornmeal; let stand until cool.

2Sift together flour, baking powder and salt.

3Beat eggs until light, then add to cornmeal.

4Add milk, flour and melted butter.

5Beat until batter is smooth.

6Pour into a shallow, well greased pan. Bake at 400° for 25 minutes.
