- 3/4 c. self-rising flour
- 1/2 c. corn meal (yellow)
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. sugar (can omit)
- 1 egg (unbeaten)
- 2 Tbsp. shortening, melted
- 1 c. milk
Directions

1Mix dry ingredients.

2Add egg, shortening and milk all at once.

3Stir only until all ingredients are wet.

4Pour into well-greased pie tin.

5(I use a cast-iron frying pan that has been preheated in the oven.)

6Bake at 375° to 400° until done.

7Edges will be light brown and no sound of cooking will be heard within the cornbread.
