- 3/4 c. yellow cornmeal
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt (optional)
- 1 c. skim milk
- 1/4 c. vegetable oil
- 2 egg whites or 1 egg, beaten
Directions

1Heat oven to 400°.

2Grease 8 or 9-inch baking pan.

3Combine dry ingredients.

4Combine wet ingredients.

5Stir wet into dry until dry ingredients are moistened.

6Pour batter into prepared pan.

7Bake 20 to 25 minutes or until light golden brown.
