  • 3/4 c. yellow cornmeal
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt (optional)
  • 1 c. skim milk
  • 1/4 c. vegetable oil
  • 2 egg whites or 1 egg, beaten

    Heat oven to 400°.

    Grease 8 or 9-inch baking pan.

    Combine dry ingredients.

    Combine wet ingredients.

    Stir wet into dry until dry ingredients are moistened.
