- 1 1/2 c. cornmeal (yellow or white)
- 1 or 2 Tbsp. sugar
- 4 tsp. baking powder
- 1 c. buttermilk
- 2 eggs, beaten
- 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 2 Tbsp. bacon drippings
Directions

1Preheat oven to 450°.

2Place cast-iron skillet in preheating oven with bacon drippings.

3Sift dry ingredients together.

4Add liquid ingredients; blend until smooth.

5Remove hot skillet from oven.

6Be sure that sides of skillet are covered with bacon drippings.

7Pour batter into skillet and return to oven.

8Bake for 20 to 25 minutes or until toothpick is clean.

9Remove from oven. Serve immediately.
