- 1 c. all-purpose unbleached flour
- 2 tsp. baking powder
- 1/2 tsp. salt (optional)
- 1 c. cornmeal
- 2 large eggs
- 1 c. milk
- 1/4 c. vegetable oil or melted margarine or butter
Directions

1Heat oven to 425°.

2Into large bowl, sift flour, baking powder and salt (if desired).

3Stir in cornmeal and mix well.

4In medium size bowl, beat eggs lightly.

5Stir in milk and oil until blended. Pour this over cornmeal mixture; stir only until moistened (do not overmix).
