- 2 large onions, chopped
- 2 eggs
- 2 (17 oz.) cans cream-style corn
- 1 (1 lb.) pkg. cornmeal muffin mix
- 1/2 pt. dairy sour cream (1 c.)
- 2 c. shredded sharp Cheddar cheese (8 oz.)
- 6 Tbsp. butter or margarine
- 2 Tbsp. milk
Directions

1Preheat oven to 425°.

2Butter 13 x 9-inch or 2 (8-inch) square dish.

3In skillet, saute onion, set aside.

4Mix eggs and milk until blended.

5Add corn and muffin mix.

6Mix well.

7Spread corn bread batter into baking dish.

8Spoon sauteed onion over top.

9Spread sour cream over mix.

10Sprinkle with cheese.

11Bake 35 minutes until puffed and golden.

12Let stand 10 minutes before cutting.
