Corn Bread Casserole

Ingredients

  • 1 can (drained) whole kernel corn
  • 1 can cream-style corn
  • 2 eggs, beaten
  • 1 pkg. Jiffy corn muffin mix (can use Mexican corn bread mix)
  • 1 onion, finely chopped
  • 1 green pepper, chopped
  • 1 stick margarine
  • 1 pt. sour cream
  • 2 c. grated cheese (mild Mexican Velveeta)
  • salt to taste

Directions

    Saute onion and green pepper in margarine, fold corn into beaten eggs.

    Add cornbread mix to egg mixture.

    Add onion and green pepper.

    Pour into well-greased 9 x 13 x 2-inch baking dish. Spread sour cream over cornbread mixture and top with cheese.

    Bake in 350° oven for 30 to 40 minutes.

    Can put aluminum foil over top until last few minutes to let topping brown.
