Corn Bread Casserole

Ingredients
- 1 can (drained) whole kernel corn
- 1 can cream-style corn
- 2 eggs, beaten
- 1 pkg. Jiffy corn muffin mix (can use Mexican corn bread mix)
- 1 onion, finely chopped
- 1 green pepper, chopped
- 1 stick margarine
- 1 pt. sour cream
- 2 c. grated cheese (mild Mexican Velveeta)
- salt to taste
Directions

1Saute onion and green pepper in margarine, fold corn into beaten eggs.

2Add cornbread mix to egg mixture.

3Add onion and green pepper.

4Pour into well-greased 9 x 13 x 2-inch baking dish. Spread sour cream over cornbread mixture and top with cheese.

5Bake in 350° oven for 30 to 40 minutes.

6Can put aluminum foil over top until last few minutes to let topping brown.
