Corn Bread Casserole

- 2 large onions
- 6 Tbsp. margarine
- 2 eggs
- 2 Tbsp. milk
- 2 (17 oz.) cans cream-style corn
- 1 lb. corn meal muffin mix
- 1/2 pt. sour cream (1 c.)
- 2 c. shredded Cheddar cheese (8 oz.)
Directions

1Preheat oven to 425°.

2Butter a 13 x 9-inch baking dish.

3In a medium skillet, saute onion in margarine until golden.

4Set aside. In a medium bowl, mix egg and milk until blended.

5Add corn and muffin mix. Mix well. Spread corn bread batter into baking dish. Spoon sauteed onions over top.

6Spread sour cream over onions. Sprinkle with cheese.

7Bake 35 minutes or until puffed and golden.

8Let stand 10 minutes before cutting into squares.

9May be frozen and reheated. Serves 16.
