Corn Bread(Moist Type)

Ingredients

  • 4 c. water
  • 2 c. yellow cornmeal
  • 1 tsp. salt
  • 1 c. sugar
  • 1 or 2 eggs
  • 1 c. milk
  • 1 c. flour
  • 1 tsp. baking powder

    Boil the water.

    Place the cornmeal in a large mixer bowl. Pour boiling water over meal, slowly mixing, to scald meal.

    Add the salt and sugar. Add the eggs one at a time into mixture. Scrape bowl as mixing.

    Add the milk and flour alternately. Add the baking powder.

    Grease a 10-inch frying pan (or similar container). Bake at 350° for about 1 hour. Allow to cool at least 1/2 hour before serving.

    When cooked, top will be lightly golden and corn bread will pull away from sides of pan.
