- 1/4 c. nonfat dry milk
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. yellow cornmeal
- 2 eggs, slightly beaten
- 1/2 c. water
- 3 Tbsp. salad oil
Directions

1Preheat oven to 400°.

2Lightly oil muffin tins.

3Sift together flour, nonfat dry milk, baking powder and salt.

4Add cornmeal and mix well.

5Combine eggs, water and salad oil and add to dry ingredients, stirring just until moistened.

6Fill muffin tins 2/3 full.

7Bake for 20 minutes.

8Makes 16 muffins, 81 calories per muffin.
