  • 1 pkg. Jiffy corn muffin mix
  • 1 lb. sweet bread and butter pickles
  • 2 large tomatoes
  • 1/2 large green sweet pepper
  • 1/2 c. heaping mayonnaise
  • 2 Tbsp. pickle juice
  • 1/2 large onion
  • 1 lb. mild sausage

Directions

    Mix and bake cornbread.

    Cook and crumble sausage.

    Crumble as it cooks; drain off grease by pouring water over it, to get all of it.

    Chop pickles, tomato, onion and pepper.

    Add mayonnaise and pickle juice.

    Stir in sausage.

    Add cornbread. Toss.
