  • 1 1/2 lb. ground beef
  • 1 pkg. taco seasoning
  • 1/2 c. water
  • 1 can (12 oz.) whole kernel corn, drained
  • 1/2 c. chopped green pepper
  • 1 can (8 oz.) tomato sauce
  • 1 pkg. (8 1/2 oz.) corn muffin mix
  • 1 can (2.8 oz.) French fried onion rings
  • 1/2 c. (4 oz.) shredded Cheddar cheese

Directions

    Brown meat; drain.

    Stir in next 5 ingredients; pour into 9 x 13-inch baking dish.

    Prepare corn muffin mix except add 1/2 can onion rings.

    Spoon around outer edge of casserole. Bake, uncovered, at 400° for 20 minutes. Top with cheese and remaining onions.

    Bake 2 or 3 minutes longer.
