- 2 c. self-rising cornmeal
- 1 (8 oz.) can cream-style corn
- 2 eggs, lightly beaten
- 1 c. Cheddar cheese, grated
- jalapeno pepper (optional)
- 1/2 to 1 lb. ground beef, cooked and drained
- 1/2 c. oil
- 1 large onion, chopped
Directions

1Combine cornmeal, corn, sour cream and eggs.

2Heat frying pan and oil.

3Pour 1/2 cornmeal mixture into frying pan.

4Top with cheese and crumbled ground beef.

5Add jalapeno (if you like it hot).

6Add onion.

7Cover with remaining cornmeal mixture.

8Bake at 350° for 45 minutes.
