  • 1/2 medium yellow onion, thinly sliced (about 3/4 cup)
  • 1 cup fromage blanc
  • 2 tablespoons grated Parmigiano-Reggiano cheese, plus more for garnish
  • 11/2 teaspoons Champagne vinegar
  • 1/2 teaspoon minced tarragon
  • 2 teaspoons minced chives, divided

  • 11/2 pounds fresh pasta sheets
  • 4 tablespoons (1/2 stick) unsalted butter, cut into small cubes
  • 2 teaspoons finely chopped flat-leaf parsley
