Corn Casserole

Ingredients

  • 1/2 c. chopped onion
  • 1/2 stick margarine
  • 1/4 c. chopped green pepper or green chilies
  • 1 (16 oz.) can whole kernel corn
  • 1 (16 oz.) can creamed corn
  • 2 eggs
  • 1 pkg. Jiffy corn muffin mix
  • 2 Tbsp. chopped pimento (optional)
  • 1 c. sour cream
  • 2 c. grated Cheddar cheese

Directions

    Saute the onion and green pepper or green chilies in the margarine.

    Mix together the remaining ingredients, except the sour cream and cheese.

    In a greased 9 x 13-inch pan, layer the corn mixture, sauteed onion mixture, sour cream (or yogurt) and 2 cups cheese. Bake at 400° for 30 minutes.
