- 1 (16 oz.) can whole kernel corn
- 1 (16 oz.) can cream-style corn
- 1 small box Jiffy corn muffin mix
- 3 eggs, beaten
- 1 small onion, chopped
- 1/2 medium green bell pepper, chopped
- 1 stick margarine, melted
- 1 c. shredded Cheddar cheese
- 1/2 pt. sour cream
Directions

1Preheat oven to 350°.

2Combine first four ingredients in large bowl, mix well.

3Add onion, bell pepper and melted margarine. Pour mixture into lightly greased 2 1/2-quart casserole dish.

4Mix Cheddar cheese and sour cream and spoon over mixture.

5Bake for 45 minutes.

6Makes 8 to 10 servings.
