Ingredients

  • 7 1/2 oz. box Martha White or Jiffy instant corn muffin mix
  • 1 egg
  • 1/2 stick melted butter
  • 1 can creamed corn
  • 1 can Niblets corn, drained
  • 1 small carton sour cream or 1/2 large carton sour cream
  • 1/2 c. sharp Cheddar cheese, grated
  • 1/2 c. Ritz crackers

Directions

    Mix together creamed and Niblets corn, 1/2 box muffin mix, egg, sour cream and melted butter.

    Stir well and place in 9 x 14-inch Pyrex dish.

    Mix Cheddar cheese and crushed Ritz crackers together and sprinkle on top of casserole.

    Bake at 325° for 30 to 40 minutes.
