- 1 stick butter
- 1/2 medium bell pepper, chopped
- 1 medium onion, chopped
- 2 cans cream style corn
- 1 c. Minute rice, uncooked
- 1 small jar pimento, chopped
- 2 Tbsp. sugar
- salt and pepper to taste
- 1 c. American cheese, grated
Directions

1Saute bell pepper and onion in butter.

2Mix in corn, rice, pimento and sugar.

3Place in a 1 1/2 quart casserole.

4Bake at 350° for 25 minutes.

5Top with cheese and bake an additional 15 minutes.

6Serves 8.
