Ingredients

  • 3 extra large eggs
  • 2 (10 oz.) pkg. frozen corn, thawed and drained
  • 2 medium green peppers, diced or blended
  • 1/2 stick butter, melted
  • 8 oz. sour cream
  • 4 oz. sharp Cheddar cheese, cubed
  • 4 oz. Monterey Jack cheese, cubed
  • 1/2 c. corn meal
  • 1 Tbsp. soy sauce
  • 1 Tbsp. Tabasco sauce
  • 1 small onion, diced or blended
  • 1 tsp. pepper
  • 1 Tbsp. cumin
  • 1 Tbsp. chili powder
  • 1 dash red pepper
  • 1 tsp. thyme
  • 1 tsp. marjoram

    Mix all ingredients in a bowl (if too liquidy, add more corn meal).

    Put into 2 well-greased 9-inch pie pans and bake at 350° for 1 hour, or until top is golden and semi-hard.
