Ingredients

  • 2 (10 oz.) pkg. frozen cut corn, defrosted
  • 1 large onion, sliced
  • 1 green pepper, chopped
  • 1 lb. ground beef
  • 3 Tbsp. fat
  • 2 c. canned tomatoes
  • 1 1/2 tsp. salt
  • 1/8 tsp. paprika
  • 1/8 tsp. cayenne pepper
  • 1 bay leaf
  • 1 tsp. chili powder

Directions

    Remove frozen corn from freezer to defrost while preparing other ingredients.

    Brown onion, green pepper and ground beef in hot fat in heavy skillet.

    Add tomatoes and seasonings and bring to boiling.

    Add frozen corn and mix well until kernels are well separated.

    Cover and cook until corn is done, about 2 to 3 minutes.

    Remove bay leaf to serve.

    The recipe serves six.

    Add more chili powder if a hotter flavor is desired.
