  • 2 ears corn, silk and husks removed
  • 1 large fresh red chili pepper, seeded and chopped
  • 1/4 cup fresh cilantro leaves
  • 1/2 small red onion, finely chopped
  • 1 tbsp lime juice

Directions

    Cover corn with water in a medium saucepan. Bring to a boil. Reduce heat to medium-low; simmer 5 mins or until corn is tender. Drain; cool slightly.

    Cut corn kernels from cob. Combine kernels in a medium bowl with remaining ingredients. Season to taste.
