  • 1/4 c. chopped green onion
  • 1 1/4 c. chicken broth
  • 2 c. peeled and cubed potatoes
  • 2 Tbsp. instant nonfat dry milk
  • salt and pepper to taste
  • 1/4 tsp. vegetable oil
  • 1 c. low-fat milk
  • 1 pkg. frozen corn
  • 1/8 tsp. dry mustard

Directions

    Saute onion in oil 2 minutes.

    Add broth, milk and potatoes. Simmer until potatoes are tender (12 minutes).

    Add corn and cook 1 minute.

    Puree 1 cup chowder in food processor.

    Return to saucepan.

    Stir in dry milk, mustard, salt and pepper.

    Yields 4 (1 cup) servings.
