- 6 slices bacon
- 1 medium onion, chopped
- 2 large potatoes, peeled and cubed
- 1 c. water
- 1 qt. half & half
- 1 pkg. frozen corn
- 1 tsp. basil
- 1/2 tsp. thyme
- salt and pepper to taste
- 1/4 c. chopped celery (optional)
Directions

1Fry bacon, set bacon to drain; reserve 1 to 2 tsp. drippings. Put potatoes and water on, bring to a boil, simmer until done. Saute onions (and celery if desired) in bacon drippings until transparent, add seasonings.

2Combine all of the above and add the half & half and the corn; simmer 30 minutes to 1 hour to meld flavors.
